Brodsky's approach is exceptionally meticulous. They hand-pick the ripest cherries and sort them for quality. The cherries are dried on the top level of a multi-level drying table until they reach 18% moisture. They're then moved to a lower level and rotated every 2 hours until they reach 11.5% humidity. They're then rested for 30-60 days before being milled for export. This Natural Gesha is an absolute stunner.
