Sweet and complex anaerobic natural from Yemen!
The Sharqi Haraz Coop blends generations of knowledge with modern processing techniques to produce exceptional coffee. The Sana'a region's high elevations, mineral-rich soil, and rugged terrain cause the cherries to mature slowly, extending the ripening period and yielding coffee with intense sweetness and complexity. Harvest begins by hand-picking the ripest cherries, followed by careful sorting for quality. The cherries are placed in sealed tanks to ferment anaerobically for 72 hours. They’re then rinsed and dried in the sun to a final moisture content of 11%, preserving their structure, sweetness, and stability. The result is sweet and complex, with notes of red-flame grape, fig, dried fruit, and allspice, finishing with a rich fudge-brownie flavor.
